| 1 cup | Anna’s Almond Cinnamon Thins, crushed |
| ¾ cup | plain low-fat yogurt |
| 2 cups | low-fat cottage cheese |
| ¼ cup | no-sugar raspberry spread |
| 1 pkg. | light raspberry Jell-O |
| ½ cup | boiling water |
| 2 | egg whites |
| fresh fruit |
Combine Anna’s Almond Cinnamon Thins crumbs and 3 Tbsp. of yogurt and press into the bottom of 8” springform pan. Bake at 375º for 8 – 10 minutes. Cool thoroughly; chill.
Meanwhile, in a blender, blend cottage cheese until smooth. Transfer to bowl; stir in remaining yogurt and raspberry spread.
In another bowl, combine jelly powder and boiling water. When dissolved, stir into cheese mixture.
Beat egg whites into soft peaks and fold into cheese mixture. Pour into prepared crust. Chill 3 hours or overnight. Before serving, garnish with fresh fruit if desired.
